Welcome Hey there, thanks for stopping by! Welcome to my little corner of the internet, my place to share my voice and photography. In case you don't know me, I am Sara (that's me to the left, the one without a big white furry coat). I am a photographer based in the San Francisco Bay area, California. As the weather turns cold and the holidays come and go I find myself wanting to bake. This recipe is a perfect solution, and the resulting cookies are pretty darn good. They go great with a nice cuppa tea on a chilly winter afternoon. A new comfort food.

Ingredients:

1/2 cup pitted dates
3/4 c. almonds (I used 1/2 cup almonds and 1/4 cup almond butter and that worked great)
1/4 c. macadamia nuts
1/2 cup shredded coconut
1 tsp coconut oil (melted)
1 egg
1/2 cup raisins
1/2 tsp cinnamon

Preheat the oven to 350

In a food processor grind up the nuts  and dates until everything is small and crumbly, then transfer to a bowl. Mix in the remaining ingredients. Smoosh the dough into cookie shapes and place on a cookie sheet. They can be close to each other because they will not rise at all. Place in the oven and bake for 10-15 minutes or until the cookies are a nice golden color.

Pat yourself on the back for a job well done and enjoy your cookies!
